Monday Meals: Peanutty Chicken



Our family LOVES peanuts. We’ll eat peanut butter on toast for breakfast, peanut butter sandwiches for lunch, a handful of peanuts for a snack, and this lovely meal for dinner.




This is one of our favorites, and it came from a book called Busy Families Cookbook (from Taste of Home). I bought this book in a rush and without paying too much attention to it – I was on my senior trip in college and realized that Mother’s Day was soon after I would return. It was one of the best purchases I’ve ever made. We have found so many great (and quick and easy!) recipes in this cookbook! I would highly recommend it!




These are the only ingredients you’ll need for this tasty meal (well, you’ll need chicken too, but it was already in the pan by the time I took this picture).




Here are the yummy spices to rub onto the chicken – chili powder, salt, and pepper.




Raw chicken is not the most appetizing, but trust me: it gets better!




It’s so simple – once the chicken is cooked, add the orange juice and peanuts. Mmmmm… warm peanuts!




We made this peanutty chicken with mashed potatoes and peas. The potatoes taste great with some of the peanuts and “gravy” mixed in!






1 tsp. chili powder

1 tsp. salt

¼ tsp. pepper

chicken (the original recipe called for a 3.5-4 lb broiler/fryer chicken; we used 4 chicken breasts)

5 tbsp. butter

1 cup orange juice

⅔ – 1 cup salted peanuts



  1. Combine chili powder, salt, and pepper; rub over chicken. In a large skillet, sauté chicken in butter until golden brown. Reduce heat; cover and cook for 30 minutes or until juices run clear.
  2. Add orange juice to skillet, stirring to loosen browned bits from pan; add peanuts. Simmer for 5 minutes. Garnish with orange slices, fresh cilantro, and/or parsley if desired.


And that’s it! The cookbook says it takes 40 minutes from start to finish, but sometimes it doesn’t even take us that long to make. Enjoy!
