Healthy Breakfast Cookies



These little gems are the perfect cross between healthy and delicious. I have been known to eat them for breakfast too.


My sister found this recipe somewhere on the web when we had an abundance of flaxseed one day. Here is the cast of characters.


The first step is establishing the background characters (cream together the butter with the sugars).


Then comes the title character: we ground our flaxseed in the blender.


And it’s time for the title character to meet Mr. Butter and Ms. Sugar.


Next, secondary characters Eggs and Vanilla are introduced…


…And take their place with the rest of the cast.


Finally comes the plot twist at the end – dry ingredients that change everything (in this case salt, flour, and baking soda).


But wait, there’s more! Don’t forget the oatmeal!


And here is what the batter looks like after you've mixed it all together.


Then we scooped up our characters and made them into balls and sent them off to be baked.


You could easily mix in a lot of other yummy things too, like cranberries, raisins, honey, nuts, bananas… the list goes on. Or they are delicious just as they are.


And this is end result! Healthy, delicious, and not too sweet even for breakfast.


Flaxseed Cookies

1⅓ cups butter
1¼ cup granulated sugar
1½ cup brown sugar
2⅓ cup flaxseed, ground
3 eggs
1½ tsp. vanilla
½ tsp. salt
3½ cup flour
1 T. baking soda
3 cups oatmeal


  1. In a bowl, cream butter and sugars. Add flaxseed.
  2. In another bowl, beat eggs and vanilla together. Combine with flax mixture.
  3. Sift together salt, flour, and baking soda. Mix in oatmeal and combine with other ingredients.
  4. Form into balls, slightly flattened, and place on greased cookie sheet. Bake at 350 degrees for 13-15 minutes.
