Friday Pie-Day: Four-Fruit Pie

I love hot fruit pies, and here is another delicious recipe we got from Taste of Home to use for our monthly pie this year. It was quite simple to make, and the results were scrumptious!


The four fruits in this pie are…


We used all frozen fruits (except apple), so we allowed some extra time at the beginning to thaw them out. 


And… we added a little more fruit than was requested, so we adjusted the other ingredients accordingly too. Anyway, first all the fruits got tossed with some lemon juice.


Next we added the sugar and flour, which we had previously mixed together in a bowl.


We ended up doing almost 1 and a half sized portion of each of the fruits, so we added a full cup of sugar and a half cup of flour. 


We also added some ingredients of our own, like cinnamon and nutmeg. Then the fruit had to sit on the counter for 30 minutes.


In the meantime, we got busy making our pie crust.


And then we poured it in the pan…


We topped it with a lattice crust.


And then we sprinkled sugar on top of the crust.


Then bake it! When you remove it, the filling will still be bubbling!


You will want it to sit and cool for at least an hour or two so the filling has time to thicken and not be runny.


This pie was pretty easy to make and quite delicious.

 

It was a pie to savor – the more we let it sit in our mouths the more flavors we tasted. These four fruits were a great combination!


Four Fruit Pie (recipe from Taste of Home)

1 cup sliced rhubarb (1-inch pieces)
1 cup chopped peeled apple
1 cup blueberries
1 cup raspberries
1 tsp. lemon juice
¾ cup sugar
¼ cup flour
1 tsp. cinnamon
½ tsp. nutmeg
optional: additional sugar


  1. In a large bowl, gently toss rhubarb, apple, berries, and lemon juice.
  2. Combine sugar, flour, cinnamon, and nutmeg; stir into the fruit and let stand for 30 minutes.
  3. Line a pie plate with bottom crust. Add filling, then add top crust. Sprinkle with extra sugar if desired. Bake at 400 degrees for 50-60 minutes. Cool on a wire rack; store in refrigerator.
