Friday Pie-Day: Butterscotch Pie



It all started because we had some butterscotch chips left over from a cookie recipe. They sat in our fridge for months before we finally went on All Recipes and looked up ways to cook them.





My dad is a big butterscotch fan, so when we decided to make this pie in March 2011 for our "pie of the month," he was very excited. Here are the ingredients we used - proof that good things can come of store-brand products! (I think the only thing that wasn't Publix brand was the cornstarch.)




It begins by cooking on top of the stove. The filling has to be stirred constantly until it thickens. This actually took 20-30 minutes. It seemed like nothing was happening for the longest time, but then all of a sudden it was gloppy and thick.




We used a pre-made pie crust at this time, but you could easily make half of this recipe (no top crust necessary). The pie crust needs to be baked already before the filling is poured in. (Just poke it all over with a fork so the pastry doesn’t puff up.)




I thought a butterscotch pie would be the chips melted, but it turned out to be normal kitchen ingredients involved to make my own butterscotch – brown sugar, milk, eggs, butter. It takes next to no time in the oven, since the crust is baked beforehand and the filling was already mostly cooked on the stovetop.




And how about those butterscotch chips – the reason we made this pie in the first place? Well, we used them up.




I think the top of the pie would have looked a little boring without them.




The pie was unlike any we had tasted before. It definitely tasted just like butterscotch!




Not all of us are huge butterscotch fans, but we enjoyed this pie!




Butterscotch Pie (from All Recipes)


1 cup brown sugar

4 tbsp. cornstarch

½ tsp. salt

2 cups milk

2 egg yolks, beaten

1 tbsp. butter

1 tsp. vanilla

1 (9 inch) pie crust, baked

optional: butterscotch chips



  1. Combine brown sugar, cornstarch, salt, and milk in pot on stovetop. Cook on medium heat and stir constantly until it thickens.
  2. Mix in egg yolks; stir, and continue cooking until thickened.
  3. Remove from heat. Add butter and vanilla, then stir again.
  4. Pour into cooked pie crust. Bake at 400 degrees for 5 minutes or until brown.
  5. Top with butterscotch chips if you choose.
