Friday Pie-Day: Fresh Strawberry Pie



Here is a very simple recipe for a fresh summery pie! Unfortunately, this was our June pie of the month way back in 2010, so the pictures aren’t that great, but it’s super easy to make!





Start out by making the pie crust. Pierce it all over with a fork before baking it so that it doesn’t puff up too much. 




While the crust is in the oven, chop up the strawberries! We were making 2 pies, so we got 2 cartons.




Pour the strawberries into the baked (and cooled) pie crust.




Prepare jello on the stovetop.




Pour jello over strawberries.




Refrigerate.




And that’s it!




It’s such a fresh-tasting pie that’s perfect for the summertime!




Aunt Betty’s Fresh Strawberry Pie

1 ½ cups water

1 cup sugar

2 tbsp. cornstarch

1 small pkg. strawberry jello

4 cups chopped strawberries

1 (9-inch) pie pastry, baked


  1. Cook water, sugar, and cornstarch in a saucepan until thick. Stir in jello. 
  2. Add strawberries to baked pie crust. Pour jello mixture over strawberries. 
  3. Chill until jello is set (overnight is best). Serve with whipped cream.
