These little gems are the perfect cross between healthy and
delicious. I have been known to eat them for breakfast too.
The first step is establishing the background characters (cream
together the butter with the sugars).
Then comes the title character: we ground our flaxseed in the
blender.
And it’s time for the title character to meet Mr. Butter and
Ms. Sugar.
Next, secondary characters Eggs and Vanilla are introduced…
…And take their place with the rest of the cast.
Finally comes the plot twist at the end – dry ingredients that
change everything (in this case salt, flour, and baking soda).
But wait, there’s more! Don’t forget the oatmeal!
And here is what the batter looks like after you've mixed it all together.
Then we scooped up our characters and made them into balls and
sent them off to be baked.
You could easily mix in a lot of other yummy things too, like cranberries,
raisins, honey, nuts, bananas… the list goes on. Or they are delicious just as
they are.
And this is end result! Healthy, delicious, and not too sweet even for
breakfast.
